大闸蟹是水产品中的珍品,其营养丰富,味道鲜美,深受广大消费者的喜爱。现在就把大闸蟹与几种人们喜爱的淡水鱼,虾的每百克可食部分所含有的营养成分在以下列表中列出,加以对比。

从上表不难看出,大闸蟹的营养成分与其他几种高档水产品对比,具有以下特点:
脂肪含量较高  每百克可食部分含脂肪5.9克,居表中所列水产品之首。碳水化合物每百克含量7克,也高于其他淡水产品。这也决定了大闸蟹所含的热量高,因此当品尝大闸蟹时,吃上2~3克就有饱食感。
钙,铁含量比较高 每百克大闸蟹可食部分含钙129毫克,分别为虾的1.3倍,鲫鱼的2.4倍,鲤鱼的2.7倍,桂鱼的1.6倍,草鱼的3.6倍,乌鱼的2.3倍。铁的含量每百克大闸蟹可食部分为13毫克,远远高于其他水产品,分别是虾的10倍,银鱼的26倍,鲫鱼的5.2倍,鲤鱼的5.7倍,桂鱼的18.6倍,草鱼的18.6倍,乌鱼的26倍。钙和铁多是人体重要的营养成分。
维生素含量丰富 大闸蟹每百克可食部分含有维生素A5 960国际单位,这是绝大多数海水,淡水产品所无法比拟的。大闸蟹每百克含硫胺素0.03毫克,为虾,银鱼,桂鱼的3倍。大闸蟹每百克含核黄素0.71毫克,远高于其他水产品,有的甚至高出10多倍。大闸蟹每百克含尼克酸2.7毫克,高于除乌鱼外的所列水产品。
